Easter Bunny Hug Biscuits

With Easter around the corner these little Easter bunny biscuits are so cute to for the kids to make.  Baking with children is fantastic for them, it gives them so much more than you can imagine, from learning new words, to maths to science and life skills.

Ingredients:

125g Unsalted Butter (softened)

125g Caster Sugar

1 small Egg

1 tsp Vanilla Extract

250g Plain Flour

½ tsp Baking powder

10-15 Easter mini eggs

Decorations

Preheat the oven to 190°C/170°C fan/Gas Mark 5.

Line 2 x baking trays with baking parchment.

Method:

In a large bowl, cream together the softened butter and sugar.

Add the egg, and vanilla extract and beat into the mix

Then sift the flour and baking powder, again mix well to ensure everything is thoroughly mixed, you might need to pop it onto your floured work surface to knead the dough so it’s smooth, if it’s sticky add some more flour.

Roll the dough to about a 5mm with your gingerbread man cutter, cut out the bunnies, if you turn the gingerbread man upside down you will see your bunny, pop a mini egg on it and bring in the arms to meet the egg.

When you have cut out all the bunnies, re-work the dough until you have finished.

Place the bunnies in the oven and bake for 6-8 minutes, until golden brown.

Leave on the tray until they have cooled down and hardened, then they are ready for decorating.
