This week’s blog taps into the inspiration behind the cakes with secret ingredients made by founder and baker extraordinaire Kate Saunders at Blackberry Cottage
Q: So Kate, can you remember when you first started getting an interest in baking
Kate: I’ve always baked, used to bake as a kid with my mum. So baking for a job now feels really natural
Q: So this hasn’t always been your job then?
Kate: No. I used to work with the Olympic and Paralympic Teams as a sport massage practitioner and travelled with them, so nutrition was always a hot topic. I only started doing this full time in January 2015
Q: That’s quite a change of career! What was the inspiration behind Blackberry Cottage?
Kate: It was one of my clients who was in despair over her children not eating vegetables. They were more than happy to eat cake, as most kids are, so I came up with the idea of making cakes with vegetables. But making the vegetables as the largest ingredient in the cakes so they had a real health benefit to the children
Q: And what was the response from the children
Kate: They devoured the cakes in minutes and didn’t even realise they had just gobbled up a load of veggies in the process
Q: It sounds like you’ve achieved loads in such a short time, what’s been the highlight so far – Kate: I think it is the awards that we have won, especially from Theo Paphitis. And seeing peoples faces when they eat a chocolate brownie with spinach and you tell them the spinach is the largest ingredient, they place it to their mouth with such in trepidation, then taste it, and have a huge smile and say that is really nice.
Q: And the hardest part…?
Kate – For me I think one of the hardest parts is the rate we have grown in 3 years, and having to have my finger continually on the pulse, 24/7 and keeping a level head, sometimes I get a little over excited and have to ground myself. But it is always fun.
